Cilantro Lime Rice

Cilantro Lime Rice
Serves 4

1 tablespoon olive oil

1 tablespoon butter

1 small onion, chopped

2 large cloves of garlic, minced

1 cup long-grain rice

1 teaspoon s.a.l.t. sisters Lime Fresco or any sea salt

2 cups low-sodium chicken broth
-
2 limes, zested and juiced
-
2 tablespoons fresh cilantro
Directions:
Heat the oil and butter in a large skillet over medium heat. Add the onions and cook for 4-5 minutes until onions have softened. Add garlic and continue cooking for 1 minute, stirring constantly. Reduce the heat to low and add the rice and Lime Fresco sea salt. Sauté’ rice for about 3 minutes, stirring constantly to make sure the rice doesn’t burn. Add the chicken broth and bring to a boil. Reduce the heat to low, cover; simmer for about 20 minutes until the rice is tender.
Just before serving, stir in the juice of 1 lime, the zest of 1 lime and the cilantro.
