Grilled Pork Chops with Pineapple Salsa

Ingredients

For the Pineapple Salsa

  • 1 c. fresh pineapple, chopped

  • 1 large English cucumber, chopped

  • ½ small red onion, finely diced

  • Fresh lime juice, to taste

  • Salt, to taste

To Serve

  • Cooked rice

  • Extra lime wedges

Directions

  1. Preheat the grill to medium-high heat. Clean and oil the grates.

  2. Place pork chops in a shallow dish. Poke each a few times with a fork and season generously with Florida Citrus Sunrise Blend and black pepper.

  3. In a small bowl, combine the pineapple, cucumber, red onion, and lime juice. Season with salt to taste and set aside.

  4. Grill the pork chops over direct heat for about 5 minutes per side, or until nicely charred. Move to indirect heat, cover, and grill for another 4 minutes or until internal temperature reaches 140°F.

  5. Remove from the grill and let rest for 5 minutes before serving.

  6. Spoon the pineapple salsa over each pork chop and serve with cooked rice and extra lime wedges on the side.
