Growing up in northern Indiana, my dad was big on fishing, and we often enjoyed his daily catch as a family. These mealtime moments were special, as they allowed us to connect over his passion for nourishing our loved ones. It was during these family dinners that my own love for cooking began to take root. As I've become the primary chef in my own home, I've cherished the opportunity to recreate those beloved family favorites, which is why I'm excited to share this easy and delicious Herb Crusted Cod recipe with you.
Cod is a wonderfully versatile protein that can be prepared in a variety of ways, whether you're frying it up for a classic fish and chips, baking it with vegetables, or searing it to perfection. For this dish, I like to start by searing the cod filets in a pan to create a beautiful, golden-brown crust. I then transfer the filets to the oven to ensure we don't lose too much of the fish's natural moisture and flavor during the cooking process.
The real star of this recipe, however, is the parmesan topping. The rich, creamy texture of the cheese, combined with the fragrant herbs and spices, creates a simply irresistible crust that complements the mild, flaky cod beautifully. Feel free to put your own spin on this recipe by experimenting with different herb and spice combinations or even adding a crunchy breadcrumb topping for extra texture!

Ingredients:
- 2 lbs. fresh cod, cut into 3–4 oz. pieces
- 2 TBSP extra virgin olive oil
- 1 egg
- 1 tsp water
- 2 tsp fresh thyme, chopped
- 2 tsp fresh basil, chopped
- 1 TBSP s.a.l.t. sisters Roasted Garlic Sea Salt
- 1–2 cups fine bread crumbs
- Cherry tomatoes, halved
- Grated parmesan cheese
Directions:
- Preheat the oven to 350°F (175°C). Cut the fresh cod into 3–4 oz. pieces.
- In a large frying pan, heat extra virgin olive oil over medium heat.
- In a small bowl, beat the egg with 1 teaspoon of water.
- On a plate, mix the bread crumbs, Roasted Garlic Sea Salt, and chopped herbs.
- Dip each piece of cod in the egg mixture, then coat both sides with the seasoned bread crumbs.
- Fry the cod in the heated oil until crispy on both sides. Remove and transfer to a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10–12 minutes, or until the cod is flaky and cooked through.
- Sprinkle grated parmesan cheese over the cod pieces. Top with halved cherry tomatoes.
- Serve the Herb Crusted Cod immediately.
