Ingredients

4 (6-ounce) salmon fillets, about 1 to 1½ inches thick

1 pound small potatoes (baby red or fingerlings), halved lengthwise

1 small red onion, peeled, sliced

Green beans (enough for 4 servings)

2 Tbsp. olive oil

Black pepper, to taste

Preheat the oven to 450°F.

Place salmon fillets on a plate and season generously with Orange Ginger Garlic Salt. Set aside.

Line a sheet pan with parchment paper. In a large bowl, toss potatoes and red onion with olive oil, Orange Ginger Garlic Salt, and black pepper to taste.

Arrange the vegetables in a single layer on the prepared sheet pan, leaving space for the salmon. Roast for 20 minutes, or until the potatoes are beginning to brown and are nearly tender.

Add the seasoned salmon and green beans to the pan. Return to the oven and roast for an additional 8–10 minutes, or until the salmon is opaque and flakes easily with a fork, and the vegetables are crisp and golden.
