Makes about 4 cups
- 1-28 oz can of diced tomatoes, Low sodium & preferably fire roasted
- ½ cup extra virgin olive oil
- 1 tbsp Tuscan Farmhouse Blend
- ¼ cup freshly grated Parmesan cheese, optional
Mix ingredients in a medium size bowl. Let set at room temperature for 20 minutes. Use with any pasta. You can serve over spaghetti squash or zucchini noodles. It also makes a topping for crusty Italian bread or as a pizza sauce.
