Spicy Orange and Avocado Salad
Serves 4
Directions:
Pour lemon juice into shallow bowl. Peel avocados and cut lengthwise into ¼ inch slices. Immediately dip the slices into lemon juice.
Slice off both ends of the orange. With one of the cut sides down, carefully slice off the peel of the orange taking the white skin with it. Cut crosswise into ¼ inch round slices; remove the seeds.
In a small bowl, mix mayonnaise, orange juice, Dragon’s Breath Rub until completely incorporated.
Alternatives: For non-spicy version replace the Dragon’s Breath with 1-2 teaspoons of Mojo Seasoning. For a sweeter dressing try 1-2 teaspoons of Honey Glaze Rub & Seasoning.
Place lettuce on each plate, top with orange and avocado slices then drizzle with orange mayonnaise dressing.
