Spicy Sweet Potatoes
Serves 4-6
- 3 large sweet potatoes, peeled
- 2 TBS Extra Virgin Olive Oil
- 1 TBS balsamic vinegar
- 1-2 TBS s.a.l.t. sisters Honey Glaze Rub & Seasoning
- ½ tsp sea salt
- ¼ tsp cayenne pepper
Directions:
Preheat oven to 400°. Cut sweet potatoes into 1 inch cubes. In a large bowl, add sweet potatoes, EVOO, balsamic vinegar, Honey Glaze Rub, sea salt and cayenne, tossing to coat. Transfer to a baking sheet and bake, uncovered, until potatoes are tender, about 40-45 minutes, stirring every 15 minutes. Serve warm.
