Ingredients:

  • 2 TBSP olive oil
  • 1 onion, diced (about 1 cup)
  • 1 small red bell pepper, chopped
  • 3 large cloves garlic, minced
  • 1 tsp jalapeno chile, minced
  • ¼ cup fresh or frozen corn kernels, thawed
  • 1 can black beans, rinsed and drained
  • 2 TBSP. s.a.l.t. sisters TacoTex-Mex Rub & Seasoning

Directions:

  1. Heat a sauté pan over medium heat and add the olive oil.
  2. Add the diced onion and chopped red bell pepper to the pan. Sauté for about 3–5 minutes until they start to soften. Add the minced garlic and jalapeno to the pan. Continue to sauté for another 2 minutes, being careful not to let the garlic burn.
  3. Stir in the corn and black beans. Sauté for 5–10 minutes, allowing the vegetables to fully soften and the flavors to meld together.
  4. Season the mixture with 2 tablespoons of Tex-Mex Rub. Mix well to ensure all ingredients are evenly coated with the seasoning.
  5. Serve warm as a side dish with your favorite Mexican or Tex-Mex entrees, such as tacos, burritos, or grilled meats.
