Blue Cheese Oven Fries

These are flat out a family favorite in the Andrews-Skillen household. Everytime our four girls come home or stop by to visit, I know I need to make sure I’ve got these oven fries at the ready! These Blue Cheese Oven Fries are a perfect segue into the fabulous and funky world of blue cheese. This creamy cheese sauce can be a major weapon in your kitchen repertoire; use it to make elevated mashed potatoes, bring it to your fondue night with your book club, or finish off your steaks with it.

For this recipe, I love the Iowa-based cheese makers of Maytag, but every blue cheese offers its different complexities! Whether you’re interested in supporting your local cheese makers or adventuring to the fine bleu cheeses of France, the balance of this sauce will create a great product every time, while still keeping the delicate blooms and flavors intact of your most desired blues. We hope you enjoy this spin on some crunchy, funky, salty fries, and we recommend pairing it with our burger!

A kitchen curious tip: add the cheese sauce over the fries for the last five minutes to get the bubbly, gooey, caramelized cheese crust for this epic snack or side dish. Yum!

Servings: 4-6

Ingredients:

Blue Cheese Sauce:

  • 1 cup mayonnaise
  • ½ cup crumbled Maytag or other blue cheese (about 3 ounces)
  • ½ cup half and half
  • ¼ cup sour cream
  • 1 TBSP freshly squeezed lemon juice
  • ¼ tsp Worcestershire sauce
  • ½ tsp s.a.l.t. sisters Pink Himalayan Mineral Salt, fine
  • Freshly ground black pepper

Directions:

  1. Cut the potatoes into 1/2-inch thick slices or wedges of similar thickness. Let them stand in a large bowl of cold water for at least 15 minutes (can be prepared up to 3 hours ahead).
  2. Preheat the oven to 425°F (220°C).
  3. In a medium saucepan, combine mayonnaise, crumbled blue cheese, half and half, sour cream, lemon juice, Worcestershire sauce, salt, and pepper. Heat over medium heat until warm and bubbly. Keep warm until ready to serve.
  4. Drain the potatoes and pat dry with paper towels. Place butter in a 10x15-inch jelly roll pan and melt in the preheated oven. Remove the pan and add the potatoes. Drizzle with oil of choice and sprinkle with Applewood Smoked Sea Salt. Toss until the potatoes are thoroughly coated, then spread them into an even layer.
  5. Bake the potatoes for 20 minutes. Turn them with a large spatula and return to the oven. Continue baking until the potatoes are tender, crusty, and golden brown, about 10–15 minutes more.
  6. Serve the oven fries immediately with the warm Blue Cheese Sauce on the side. Alternatively, remove the potatoes from the oven 5 minutes early, pour the Blue Cheese Sauce over them, and return to the oven for an additional 5 minutes.
