Bourbon Peach BBQ Spareribs with All-Purpose Rub

You can’t create signature spice blends without having a killer, tried and true, BBQ rub. To set the scene––it’s 1988 in Florida and I have been tasked with providing the main event of our meal: the ribs! Needless to say, they were a hit! 

This recipe originated from a magazine article that I grabbed in the checkout line that year, and over time the rub we use time and time again has evolved to be the s.a.l.t. Sisters All-Purpose Rub. Whether you’re making ribs, burgers, pork chops, or smoked chicken, give this rub and recipe a try. We will let the versatility speak for itself!

Spareribs:

Bourbon Peach BBQ Sauce:

  • 28 oz. tomato purée
  • 2 cup peach preserves
  • ¼ cup Dijon mustard
  • 1 cup Bourbon (e.g., Maker's Mark)
  • ¾ cup freshly squeezed lemon juice
  • ⅓ cup coconut sugar, firmly packed
  • 2 TBSP hot pepper sauce
  • 3–4 TBSP s.a.l.t. sisters All-Purpose BBQ Rub

Directions:

  1. Preheat the oven to 350°F (175°C).

 

  1. Arrange the spareribs in a single layer on the baking sheet(s). Score or cut through the white membrane on the back of the ribs. Liberally season both sides of the ribs with Applewood Smoked Sea Salt. Cover very tightly with foil.
  2. Bake in the preheated oven until very tender, about 60–70 minutes. Remove from the oven and let cool slightly, about 10 minutes.

(Optional) The ribs can be prepared up to 2 days ahead, covered tightly with foil, and refrigerated.

  1. In a heavy medium saucepan, combine tomato purée, peach preserves, dijon mustard, bourbon, lemon juice, coconut sugar, hot pepper sauce, and BBQ rub. Bring the mixture to a boil, stirring frequently. Reduce heat to low, cover partially, and simmer for about an hour. The sauce can be made up to 1 week ahead, covered tightly, and refrigerated. 
  2. Increase the oven temperature to 400°F (200°C). Gently cut in between each rib sliding down on one side of each bone to ensure you have meat with each portion. Arrange the ribs back on the baking sheet(s) in a single layer. Generously coat the ribs with the prepared Bourbon Peach BBQ Sauce.
  3. Bake the ribs until they are hot and the sauce starts to glaze, about 25 minutes. This can also be done on the grill over low heat. Serve the Bourbon Peach BBQ Spareribs with extra sauce on the side.
