Burrito, Taco Bar or Taco Bowl Bar

Bringing everyone together for celebrations, graduations, milestones, or just because has always been so fulfilling for me. There is nothing better than a hug from a niece or nephew, the smile on your in-laws' faces when you knock on the door, or a much-needed hug from a grandparent. Feeding them and providing the backdrop for memorable events and meals is so rewarding, but sometimes you want to sit down and enjoy that meal with those loved ones.

Enter your new best friend: our s.a.l.t. sisters Taco Bowl Bar. Who doesn’t love a warm, well-rounded meal that can be customized to any level? I have always loved the smokiness and freshness of Mexico’s flavor profiles, and this recipe is a step in that direction. The beans and rice create a great bed of flavor for our smoky chicken and chorizo. Add the bright, acidic, and creamy elements of lime juice, sour cream, and guacamole, and you have a perfectly balanced meal with salty, acidic, and fatty notes, plus a little sweetness from fresh tomatoes or onions.

So go ahead, get creative with this buildable recipe, and try making it ahead of time so you can enjoy every possible moment with your friends and family.

PS –– feel free to change up the protein combinations. Add extra beans, switch it up for steak, try some tempeh, or even go meatless with extra veggies like broccoli, or roasted.sautéd mushrooms! The choice is yours!

Servings: 12 burritos or 18 tacos

 

Black Bean and Rice Filling

Ingredients:

  • 1 TBSP olive oil
  • 1 jalapeno, seeded and chopped
  • 3 cloves garlic, chopped
  • 1 medium onion, chopped
  • 2 cans black beans, drained
  • 2 TBSP chopped cilantro
  • 2–3 tsp s.a.l.t. sisters Taco Tex-Mex Rub & Seasoning
  • 1–2 tsp hot pepper sauce
  • 2 cups cooked rice
  • s.a.l.t. sisters Sel Gris Sea Salt

Directions:

  1. Heat a nonstick skillet over medium-high heat. Add olive oil, jalapeno, garlic, and onion. Sauté for 2–3 minutes.
  2. Add black beans, cilantro, Taco Tex-Mex Rub & Seasoning, hot pepper sauce, and cooked rice, stir.  Season with a pinch of sea salt if needed. Reduce heat to low, keep warm or turn heat off and reheat when the other parts of the meal are ready. Tip:  you can add a splash of broth or water if the mixture seems too dry.

Chicken and Chorizo Filling

Ingredients:

  • 1 TBSP olive oil
  • 1 lb. boneless chicken breast, chopped
  • 1–2 tsp s.a.l.t. sisters Southwest Ranch Dip
  • 2 cloves garlic, chopped
  • 1 red bell pepper, seeded and chopped
  • ½ pound Spanish-style chorizo, casing removed and diced

Directions:

  1. Heat a nonstick skillet over medium-high heat. Add olive oil and chicken. Season chicken with Southwest Ranch Dip, stir.  Sauté until lightly browned, 2 to 3 minutes.
  2. Add garlic, red peppers, and chorizo. Sauté for 5 to 6 minutes. Reduce heat to low, keep warm or turn heat off and reheat when the other parts of the meal are ready.

Green Onion Sour Cream

Ingredients:

  • 2 cups sour cream
  • 1 lime, zested and juiced
  • 3 green onions, sliced
  • 2 TBSP cilantro leaves
  • Pinch of s.a.l.t. sisters Pink Himalayan Mineral Salt, fine

Directions:

  1. Combine all ingredients in a food processor. Process until sour cream is pale green and green onions are finely chopped.

 

Guacamole

Ingredients:

  • 4 ripe Haas avocados
  • 2 TBSP onion, finely chopped
  • 1 lemon, juiced
  • 1 large garlic clove, finely chopped
  • Several dashes of hot pepper sauce
  • 1 tsp s.a.l.t. sisters Mojo Seasoning
  • 1 medium tomato, seeded and finely diced

Directions:

  1. Cut avocados in half, remove pits, and scoop flesh into a large bowl.
  2. Immediately add lemon juice, hot pepper sauce, onion, garlic, and Mojo Seasoning. Toss well.
  3. Using a fork, mash avocados leaving some larger chunks. Add diced tomatoes and mix well.

 

Assembly:

  • 12 burrito size flour tortillas and/or 18 corn tortillas for tacos

Toppings:

  • Salsa
  • Green Onion Sour Cream
  • Guacamole
  • 1 ½ cups grated Pepper Jack cheese
  • 1 ½ cups grated White Cheddar cheese
  • 1 ½ cups crumbled Queso Fresco cheese
  • 4 to 6 scallions, chopped
  • ½ head lettuce, shredded
  • 2 tomatoes, seeded and diced
  • Cilantro leaves

Create your own customized burritos or tacos with these delicious fillings and toppings! Enjoy your flavorful Burrito or Taco Bar.  Tip:  Heat oven to 375°F. Place assembled burritos on a baking sheet and place in the oven for about 15 minutes.
