Chicken Cobb Burger
There is a special place in my heart for two salads: wedge salads and cobb salads. The latter is something of a fool-proof way of finding great restaurants for me. PIcking quality ingredients can elevate this fresh, crunchy, and hearty salad that will give a check mark to my favorite local lunch spots. It got me wondering, however, if I could have the best of both worlds and make this salad in a hand-held, walkable format. Enter: our s.a.l.t. sisters Chicken Cobb Burger!
This sandwich is seriously good: deep, creamy, charred flavors of our chicken burger, loaded with the tang of grated onion and blue cheese, accompanied by the floral and aromatic mediterranean rub seasoning we incorporate into the gently handled patties. Suit it up with a toasted bun of your choice, crisp bacon, fatty and delicious avocado, and the light juiciness of tomatoes on top, try and name something better for a family cookout or quick, balanced dinner.
This burger is so diverse, and a great backdrop to really incorporate any flavor profile. Turn this into an asian-inspired bite with our Orange Ginger Garlic Salt, some green cabbage slaw and kimchi, or something entirely different with any of our seasoning products! Ingredients:
- 8 large slices of thick-cut bacon
- 1 ½ pounds ground chicken
- 1 TBSP grated onion
- 6 TBSP blue cheese, crumbled
- 1 TBSP s.a.l.t. sisters Mediterranean Rub & Seasoning
- ¾ tsp freshly ground pepper
- 3 tsp Dijon mustard
- 1 ½ tsp Worcestershire sauce
- Olive oil
- Sea salt and freshly ground black pepper
- 1 cup finely shredded romaine lettuce
- 1 TBSP red wine vinegar
- 3 TBSP olive oil
- 1 large ripe tomato, cut into 4 slices
- 1 ripe avocado, peeled, pitted, and cut into 8 slices
- 4 large burger buns
Directions:
- Place the strips of bacon on a hot grill pan over medium-high heat. Grill for 3–4 minutes on each side, until golden brown and slightly crispy. Remove bacon to a plate lined with paper towels. Alternatively, you can bake the bacon in the oven on a baking sheet lined with parchment paper for about 25 minutes until golden brown.
- Spread the ground chicken out on a board or plate. Grate 1 tablespoon of onion into the chicken using a fine grater. Be sure to keep the juice and very finely grated raw onion in the ground chicken.
- In a bowl, combine the grated chicken with crumbled blue cheese, s.a.l.t. sisters Mediterranean Rub & Seasoning, freshly ground pepper, dijon mustard, and Worcestershire sauce. Mix gently to incorporate, being careful not to overmix.
- Form the chicken mixture into 4 (6 oz.) patties. Drizzle each patty with olive oil and season with sea salt and pepper on both sides.
- Grill the chicken burgers on medium-high heat until golden brown on both sides and cooked through, about 5 minutes per side.
- In a small bowl, toss the finely shredded romaine lettuce with red wine vinegar, olive oil, sea salt, and freshly ground black pepper.
- Place each grilled chicken patty on the bottom half of each bun. Top with a slice of tomato, 2 slices of avocado, 2 slices of bacon, and some of the dressed romaine lettuce. Cover each burger with the top half of the bun.
- Serve the Chicken Cobb Burgers immediately, accompanied by your favorite side dishes if desired.
