Ingredients

3 plum tomatoes, diced

½ red onion, diced

1 (15 oz.) can black beans, drained & rinsed

1 (15 oz.) can black-eyed peas, drained & rinsed

1 (15 oz.) can corn, drained

1 bell pepper, seeded & diced

1 jalapeño, seeded & diced

½ cup cilantro, diced
-
1 scallion, diced
-
⅓ c. olive oil

¼ c. red wine vinegar

3 garlic cloves, minced
-
1 tsp. coconut sugar
-
3 Tbsp. Salt Sisters Chile Lime Salt

Directions

In a medium bowl, combine the tomatoes, onion, black beans, black-eyed peas, corn, bell pepper, jalapeño, cilantro, and scallions.

In a separate bowl, whisk together the olive oil, red wine vinegar, garlic, and coconut sugar. Pour over the vegetable mixture.

Sprinkle with Chile Lime Salt and toss to combine.

Cover with plastic wrap and refrigerate for at least 2 hours to let the flavors meld.
