Dragon’s Breath Brownies

Chocolate has been a cherished part of our lives since the days of early civilizations like the Mayans and Aztecs in Central America. Eaten, utilized, and enjoyed in various forms, chocolate has been mixed with other aromatic flavors, like chilies, for centuries. Today's typical "hot chocolate" has its frothy, spicy origins in the ancient practice of combining cacao beans with chilies, creating the spicy chocolate we now associate with this region of the world.

Far removed from the ancient Mayan drink, we now have these sweet, spicy, luscious Dragon's Breath Brownies. I've always been a fan of daring flavors, so it was only a matter of time before I tried my hand at a spiced brownie recipe. The magic of these brownies lies in the heat that sneaks up on you. I prefer a bit of kick, so I use 3 teaspoons of our Dragon’s Breath Rub & Seasoning.

We also get to use a tried-and-true pastry technique: the double boiler. For our new at-home chefs, don't be afraid of this technique—it's here to help you! If you try to melt chocolate directly on the stove, you risk burning it and having to start over. But with a double boiler, the constant, gentle temperature of the boiling water in the saucepan safely melts your chocolate into a delicious, silky, ribbon-like format. If this still feels too daunting, you can use a microwave-safe dish to microwave your chocolate in 30-second increments, ensuring you don't burn it.

Ingredients:

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a double boiler or microwave-safe bowl, melt  1½ cups of chocolate chips with the butter or coconut oil until smooth.
  3. Stir in the raw sugar cane and eggs into the melted chocolate mixture. Mix well until combined.
  4. Add vanilla extract, s.a.l.t. sisters Dragon’s Breath Rub & Seasoning, salt, and cinnamon to the mixture. Mix until completely incorporated.
  5. Gradually add the all-purpose flour to the batter, mixing well after each addition of flour, until smooth.
  6. Fold in the remaining ½ cup of chocolate chips into the brownie batter.
  7. Pour the brownie batter into a greased 9x13 inch baking pan, spreading it evenly.
  8. Bake in the preheated oven for 20–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake.
  9. Allow the brownies to cool in the pan before slicing. Serve Dragon’s Breath Brownies warm or at room temperature, optionally with a scoop of ice cream.
