Frittata

Often, as the week or month comes to a close and your grocery supplies dwindle, you find yourself with odds and ends of vegetables and proteins lurking at the back of the refrigerator. A half onion here, some roasted mushrooms from two days ago, tomatoes just on the verge of shriveling – all these can find new life in this delicious frittata recipe.

Ingredients:

  • 2 TBSP olive oil or butter
  • 4 oz. mushrooms, sliced
  • ½ large onion, chopped
  • ½ red pepper, chopped
  • 2 cups potatoes, cooked and chopped
  • 2–3 tsp s.a.l.t. sisters Steakhouse Seasoning, divided
  • 1 pound sausage, cooked & crumbled
  • 8 eggs
  • Sea salt and freshly ground pepper
  • ½ cup heavy cream
  • 1 ½ cups sharp cheddar cheese, shredded

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil or butter in a large ovenproof skillet (such as cast iron) over medium-high heat. Sauté mushrooms until browned. Add chopped onions and red peppers; sauté until tender.
  3. Stir in cooked and chopped potatoes. Season with 1–2 teaspoons of s.a.l.t. sisters Steakhouse Seasoning. Sauté briefly to warm the potatoes and allow them to crisp slightly. Reduce heat and add crumbled sausage.
  4. In a medium bowl, whisk together eggs, heavy cream, and 1 teaspoon of Steakhouse Seasoning until well combined.
  5. Pour the egg mixture evenly over the sautéed vegetables and sausage in the skillet. Cook for 4 to 5 minutes until the eggs are just set around the edges.
  6. Sprinkle shredded cheddar cheese evenly over the frittata mixture in the skillet. Transfer the skillet to the preheated oven.
  7. Bake frittata in the oven until the cheese is melted and bubbly, and the eggs are completely set in the center, about 15 to 20 minutes.
  8. Let the frittata stand for a few minutes before slicing and serving. Serve warm.
