Charmane’s Frittata 

This version of our frittata recipe is by far my favorite, hence giving it the official Charmane seal of approval! I typically love on my family by cooking for them, but truth be told––I love when they make this for me!

Typically we have all these ingredients on hand in our kitchen, and you probably do, too! Originating from the Mediterranean, this dish is beloved for good reason. It's loaded with healthy fats, protein, and a vibrant array of vegetables, making it a wholesome and satisfying way to nourish your family. Frittatas are incredibly versatile, allowing you to mix and match ingredients based on what you have on hand.

Servings: 6-8

Ingredients:

  • Extra virgin olive oil (EVOO)
  • 4 oz. mushrooms, sliced
  • ½ medium onion, chopped
  • ½ red bell pepper, chopped
  • 2 cups potatoes, cooked and chopped
  • 2 TBSP s.a.l.t. sisters Charmane’s Bread Dip
  • 2 tsp garlic, minced
  • 1 lb. sausage, cooked and chopped
  • 8 eggs
  • Sea salt and freshly ground pepper, to taste
  • ½ cup heavy cream
  • 1 cup sharp cheddar cheese, shredded

Directions:

  1.  Preheat your oven to 350°F (175°C).
  2. Heat some EVOO in a large oven-proof skillet (cast iron recommended) over medium-high heat. Sauté the mushrooms until browned. Add the onions and red bell pepper, continuing to sauté until tender.
  3. Stir in the cooked potatoes. Season with Charmane’s Bread Dip and freshly ground black pepper. Sauté to crisp up the potatoes slightly, then reduce the heat.
  4. Add the minced garlic and chopped sausage to the skillet. Sauté for about 2 to 3 minutes, ensuring everything is well combined.
  5. In a medium bowl, whisk together the eggs, heavy cream, and a pinch of sea salt and pepper until smooth.
  6. Pour the egg mixture over the vegetables and sausage in the sauté pan. Cook undisturbed for 4 to 5 minutes, or until the eggs are just set at the edges.
  7. Sprinkle the shredded cheddar cheese over the top of the frittata. Place the skillet in the preheated oven and bake until the cheese is melted and the eggs are completely set, about 10 to 15 minutes.
  8. Let the frittata stand for a few minutes outside of the oven before cutting into wedges and serving.
