Great Steak at Home
The two greatest smells in a carnivore’s kitchen: sautéed onions and garlic, and the caramelization of a delicious steak. It's almost primal how we love the mouth-watering aromas of grilling season or any charred meat that we can get on our plate. The best grilling season is when the kids are in the pool, you have some tunes playing through your portable speaker, and you just finished up a refreshing fruit salad appetizer in the middle of summer. But I know those days aren’t forever through our busy weeks! So, I present to you the best way to cook your steaks at home, even if you don’t have the luxury of eternal summer.
Steaks are incredibly dense and packed with flavor, so when you season your steaks, don’t be afraid to be liberal with your seasonings. Most steaks are an inch and a half thick or more, and you need all that flavor to penetrate through the layers.
Now, when you hear that I season our steaks with coffee, you might look at me crazy, but trust me! The coffee helps create a nice crust, break down the meat proteins, and offers an aromatic, complex flavor to your meals. We also packed some other bold flavors in our s.a.l.t. sisters Not Your Sister’s Coffee Rub with chili powder, cinnamon, nutmeg, and pasilla negro chili powder. With all these smoky and full-bodied flavor profiles, you’ll make this rub a staple on grilling days!

Ingredients:
- Steaks (filet mignon, rib eye, etc) – minimum 1 ½ inches thick
- s.a.l.t. sisters Not Your Sister’s Coffee Rub & Seasoning
- Olive oil
- Butter, 1 TBSP per steak
- Cast iron skillet
Directions:
- Liberally oil the steaks and season them with s.a.l.t. sisters Not Your Sister’s Coffee Rub. Let them stand at room temperature for about 30–45 minutes.
- Preheat the oven to 425°F (220°C). On the stovetop, heat the cast iron skillet on high heat for 1–2 minutes until it's smoking hot.
- Place the steaks in the hot skillet.. It may smoke, so ensure good ventilation. Sear the steaks for 2–3 minutes on one side. Do not touch or flip before.
- Place a knob of butter on top of each steak. Flip the steaks using tongs and sear for another 1–2 minutes on the other side.
- Transfer the skillet with steaks into the preheated oven.
- For Medium Rare: Leave the steaks in the oven for 3–4 minutes, flipping them halfway through.
- For Medium: Leave the steaks in the oven for 5–6 minutes, flipping them halfway through.
- Remove the steaks from the oven and let them rest for a few minutes. Serve the steaks hot, with any desired sides.
