Ingredients:
- 1 cup pumpkin purée
- 2 eggs
- ⅓ cup natural peanut butter (no xylitol or sugar substitutes)
- 2 ½ cups whole wheat flour
- ½ tsp ground cinnamon
- ½ tsp s.a.l.t. sisters Pink Himalayan Mineral Salt, fine
Directions:
- Preheat the oven to 350°F (175°C). Line a large baking sheet with a silicone baking mat or parchment paper.
- In a mixer bowl, combine 1 cup pumpkin purée, 2 eggs, and ⅓ cup peanut butter until well combined.
- Mix in 2 ½ cups flour, ½ tsp cinnamon, and ½ tsp Pink Himalayan Mineral Salt until dough forms.
- Lightly flour a flat surface and roll out dough to ¼ inch thickness, using additional flour to prevent sticking.
- Cut into squares or use cookie cutters to create desired shapes, then place on a prepared baking sheet.
- Bake for about 40 minutes until the treats are firm and lightly browned.
- Allow treats to cool completely before serving. Extras can be frozen for later use.
