Ingredients

Salad:

  • 2 (15 oz.) cans chickpeas, drained and rinsed

  • ¼ c. fresh parsley, chopped

  • 1 small red bell pepper, chopped

  • 2 medium tomatoes, diced

  • 4 scallions, sliced

  • ¼ c. pitted kalamata olives

  • 1 Tbsp. Salt Sisters Lemon Rosemary Garlic Salt

  • 1 oz. feta cheese, crumbled

Dressing:

  • 1 Tbsp. fresh lemon juice

  • 1 Tbsp. red wine vinegar

  • 1 garlic clove, minced

Directions

  1. In a large mixing bowl, toss together the chickpeas, parsley, bell pepper, tomatoes, scallions, olives, and feta.

  2. In a separate small bowl, whisk together the lemon juice, red wine vinegar, and minced garlic until well combined.

  3. Pour the dressing over the salad and sprinkle with Lemon Rosemary Garlic Salt. Toss gently until all ingredients are evenly coated.
