Ingredients

2 lbs. petite red potatoes, diced into 1-inch chunks

1 c. shredded cheddar cheese

6 slices bacon, cooked and crumbled

⅓ c. chopped green onions

Directions

Add potatoes to a pot and cover with water by about 2 inches. Bring to a boil over medium-high heat, then reduce to medium and boil until fully tender, about 10 minutes.

Drain the potatoes carefully in a colander and set aside to cool. (For faster cooling, run under cold water until cool.)

In a large mixing bowl, combine the cooled potatoes, Tuscan Ranch Dip, cheddar, bacon, and green onions; toss gently to coat.
