Don't get me wrong, the cream sauce is pretty delicious on its own, but the saffron takes it to a whole new level. To balance out that earthy creamy combo, my super secret ingredient here is a tiny splash of vanilla in there. Sounds weird, right? But it works, you’re going to have to trust me on this one!

Ingredients:
- 2–3 TBSP s.a.l.t. sisters Pink Himalayan Mineral Salt, fine
- 2 TBSP unsalted butter
- 1 shallot, minced
- 1 pinch saffron threads
- 1 ½ cups heavy cream
- 1–2 TBSP s.a.l.t. sisters Salsa di Parma Bread Dip
- 1 tsp fresh lemon juice
- ½ tsp pure vanilla extract
- 8 oz. tortellini pasta or pasta of your choice
- 4 TBSP Parmesan cheese, grated
- 1 TBSP lemon zest
- 2–4 TBSP parsley, chopped
- ½ tsp s.a.l.t. sisters Blend
Directions:
- Bring a pot of salted water to a boil.
- Melt butter in a medium skillet over medium heat.
- Add minced shallot and 1 pinch saffron; sauté until shallot is soft, about 1–2 minutes.
- Pour in cream and Salsa di Parma Bread Dip seasoning; simmer until slightly thickened, about 2–3 minutes.
- Stir in lemon juice and vanilla extract.
- Cook pasta according to package directions. Reserve ¼ cup of pasta water, then drain and transfer pasta to the skillet with the sauce.
- Add Parmesan cheese, lemon zest, and parsley to the skillet; toss to combine.
- Taste and adjust seasoning with s.a.l.t. sisters Blend if needed.
