  1. In a small bowl, combine the salt and smoked pepper.

  2. Spread the ground beef out on a clean surface or in a mixing bowl and sprinkle with half of the salt and pepper mixture. Gently form into 4 balls, then press into patties without overworking the meat.

  3. Season both sides of each patty with the remaining salt and pepper mixture.

  4. Preheat a grill or grill pan to high heat. Grill the patties for 3–5 minutes per side, depending on thickness and desired doneness.

  5. During the last minute of cooking, place a slice of cheddar on each patty to melt. Lightly toast the buns on the grill, if desired.

  6. To assemble, layer each bun with a patty, a leaf of butter lettuce, a slice of tomato, and your preferred condiments.
