Ingredients

  • 1 lb. orzo

  • ¼ c. olive oil

  • 1 medium red onion, diced

  • 2–3 medium bell peppers, cored, seeded, and diced

  • 1 english cucumber, diced

  • 1 medium tomato, diced

  • 1 Tbsp. garlic, minced

  • 1 Tbsp. fresh lemon juice

  • ¼ c. fresh basil, chopped

  • 2 Tbsp. Salt Sisters Mediterranean Rub & Seasoning

  • 4 oz. feta cheese, crumbled

Directions

  1. Cook the orzo in a large pot of salted boiling water according to package directions until al dente. Drain and spread out on a baking sheet to cool.

  2. Once cooled, transfer the orzo to a large bowl and add the olive oil, onion, peppers, cucumber, tomato, garlic, lemon juice, basil, and Mediterranean Rub & Seasoning.

  3. Toss everything together until well combined and gently fold in the crumbled feta.

  4. Transfer to a serving bowl and enjoy immediately or refrigerate for up to 3 days for even deeper flavor.
