Mediterranean Chicken Skewers

These Mediterranean Chicken Skewers start with our Citrus Garlic Marinade, giving them a bright, zesty base, then get a flavorful boost from our Mediterranean Rub & Seasoning. Grilled or roasted to perfection and served with a cool, tangy Lemony Dill Dip, they’re the perfect balance of fresh, hearty, and irresistibly delicious—ideal for both weeknight meals and weekend gatherings.

Ingredients
Lemony Dill Dip:

¾ c. plain Greek yogurt
Chicken Skewers:

1 lb. boneless chicken thighs, cut into cubes

1 large red onion, cubed

1 large bell pepper, cubed

1 package mushrooms, cubed

1 full recipe of Citrus Garlic Marinade
Instructions
Lemony Dill Dip:

Combine the greek yogurt and Lemony Dill Dip until smooth. Refrigerate until ready to serve.
Chicken Skewers:

In a container, combine the cubed chicken and vegetables. Pour the Citrus Garlic Marinade over the top, ensuring everything is well coated. Cover and refrigerate for at least 8 hours or overnight for maximum flavor.

Preheat the oven to 400°F.

Line a baking sheet with parchment paper and assemble by threading the chicken and vegetables onto skewers, alternating between ingredients. Finishing by sprinkling Mediterranean Rub & Seasoning on top.

Bake for 25-30 minutes, flipping halfway through for even cooking.
