Fresh Fruit with Honey Vanilla Mascarpone

Let’s be real: who doesn’t love a fresh, chilled, crisp fruit salad on a hot August afternoon? After mowing the lawn, washing the car, or running errands, I always crave something refreshing. An ice-cold beer is one option, but a cold, hydrating fruit salad is another perfect choice. Instead of just grabbing an apple or a handful of grapes, why not treat yourself to something truly refreshing?

This fruit salad not only helps you work on your knife skills but also provides a great serving of fiber and micronutrients. It's incredibly tasty, especially when made with in-season fruits and topped with our delicious mascarpone topping.

People often give me a “huh?” when I tell them I put a cheese spread on my fruit salad. That's because they haven't tried this sweet, creamy, silky mascarpone topping that perfectly complements the tangy bites of berries or pineapple. Mascarpone, with its delicate flavor, adds a luscious gloss to the fruit salad. A splash of honey and vanilla turns it into an irresistible treat suitable for any meal.

Ingredients:

  • 1 apple, cored and diced
  • 1 kiwi, peeled and sliced
  • 1 banana, peeled and sliced
  • 1 pint raspberries
  • 1 pint blueberries
  • Bunch of grapes, cut in half
  • Any in-season fruit you like: apricots, plums, cherries, peaches, pineapple, etc.
  • 1 (8 oz.) container mascarpone
  • 2 TBSP honey
  • 1 tsp vanilla
  • 3 TBSP heavy cream
  • Pinch of s.a.l.t. sisters Pink Himalayan Mineral Salt, fine

Directions:

  1. Combine the apple, kiwi, banana, raspberries, blueberries, grapes, and any other in-season fruit in a large bowl.
  2. In a small bowl, combine the mascarpone, honey, vanilla, heavy cream, and a pinch of s.a.l.t. sisters Pink Himalayan Mineral Salt until smooth.
  3. Pour the mascarpone mixture over the fruit and gently toss to coat. Serve immediately.
